Any SIMPLE instructions on how to can vegetables?
I have a garden and I have a feeling that I’m going to get ALOT of veggies this year and thought about canning some. I went to some sights to find out how to do it but they make it look so complicated! Does anyone have experience with this that can give me the simple basics?
Thanks!!!
I will have tomatoes, broccoli, peas, carrots, pumpkins, zucchini, yellow squash, peppers, and corn.
Here’s a website that has step by step instructions on canning each type of vegetable: http://www.uga.edu/nchfp/how/can4_vegetable.html
Depending on whether you’re using a pressure canner or planning to can using boiling water, your steps may be different. Using a pressure canner is safer as it better prevents bacteria from sneaking into your veggies/cans/jars. Canning using the boiling water method can be risky as germs can sneak in and contaminate your food.
If you want to can using the boiling water method, here are a few quick steps on how to do this:
Steps to Canning Vegetables
• Pick out the fresh vegetables and have them ready
• Make sure you have several sterilized glass jars (quart or pint will do)
• Get a pot of boiling water in order to peel the vegetables (this step is optional)
• Fill the clean sterilized jars with the vegetables. Make sure there are no air pockets and remember to pack the jars tight.
• Put the warm, dried lids on the jars, and tighten up the rims.
• Place jars in a pot of boiling water for about 90 minutes, and remove them once the process is done.
