i want to go with my girlfriend and her 8 yr old daughter to florida next year. when’s the best time to book ?

i want to either go to busch gardens or disney world for at least 1 week, more likely 10 days or two weeks. Should i wait before booking or get it now? I’d like to know about flights, accommodation and also which one is better, disney or busch. thanks
